The first thing we did was make a 3D map of China out of cookie dough. We made a 3D map of Africa before, using salt dough, but I had no idea what to do with it afterwards. This way, the kids get the fun, hands-on learning, but they also get to eat it so I don't have to store it ;) We used the recipe for Oatmeal Chip Pizza in the Company's Coming Cookbook; Cookies by Jean Pare.
First I traced a backwards map of China onto parchment paper. (We used the same technique to make a piping gel transfer on top of a cake when Princess took her cake decorating course.) Then I flipped the parchment paper over so we could see the correct outline through the paper. The kids made cookie dough and then filled in the outline of China with the cookie dough.
